Add HoneySweet onion. Sauté about 5 minutes until translucent and softened.
Add lean beef and brown (~7 minutes).
When meat is mostly cooked through (it’s okay if there’s still a little pink), add canned
tomatoes, mushrooms and taco seasoning. Simmer ~3-5 minutes until meat is cooked all the way through reaching an internal temperature of 165°F and no longer pink.
While beef mixture is finishing cooking, heat corn taco shells according to package
instructions.
Scoop meat mixture with a slotted spoon into crunchy corn taco shells.
Top with shredded lettuce, cheese and whatever else your heart desires!
