Easy Lean Beef Tacos

  • 1 tsp avocado oil
  • ½ HoneySweet® onion
  • 1 lb lean beef
  • 1 15oz can diced tomatoes, drained
  • 3 small mushrooms
  • 3 tbsp taco seasoning
  • 10 crunchy corn taco shells
  • shredded lettuce for topping
  • shredded cheese for topping


  1. Preheat skillet to medium heat. Add avocado oil.
  2. Add HoneySweet onion. Sauté about 5 minutes until translucent and softened.
  3. Add lean beef and brown (~7 minutes).
  4. When meat is mostly cooked through (it’s okay if there’s still a little pink), add canned
    tomatoes, mushrooms and taco seasoning. Simmer ~3-5 minutes until meat is cooked all the way through reaching an internal temperature of 165°F and no longer pink.
  5. While beef mixture is finishing cooking, heat corn taco shells according to package
  6. Scoop meat mixture with a slotted spoon into crunchy corn taco shells.
  7. Top with shredded lettuce, cheese and whatever else your heart desires!
