Kale Cheddar Apple Salad
Ingredients
- 1 16 oz Little Bear Bagged Kale
- 1 cup of cheddar cheese cubes
- 1 gala apple
Dressing
- ½ cup of extra virgin olive oil
- ½ fresh squeezed orange juice
- ½ fresh squeezed lemon juice
- ½ clove of garlic (finely pressed or minced)
Preparation
- Wash the bagged kale in a strainer and let it sit dry.
- Chop the cheddar cheese cubes into halves and the gala apple into bite size pieces. The apple pieces can be cut to your size preference.
- Before you assemble everything make your olive oil based dressing by combining all of the ingredients under “dressing” in the ingredient list.
- Once the dressing is finished toss the kale, cheese cubes and apples into a clean bowl. After tossing the ingredients, dress the salad with the olive oil dressing and toss again to evenly distribute the dressing.
- Finish off with the grated parmesan cheese to taste.
