HoneySweet® Onion Watermelon Salad

5 oz baby Arugula

3-3 ½ cups of cubed Little Bear Watermelon

¼ HoneySweet® Onion (thinly sliced)

½ cup radishes (thinly sliced)

4-5 leaves of mint

Crumbled feta cheese to taste


1 tbs champagne vinegar

4 tbs olive oil

¼ tbs black pepper

¼ kosher salt


  1. Wash the arugula and set to the side to dry. Prep the watermelon by cutting it into cubes, the radishes and onions by thinly slicing and by cutting the mint leaves into fine pieces. Set your prepped fruit and veg to the side.
  2. Mix your wet salad dressing ingredients together an whisk them in a blow. Slowly add in the salt and pepper and whisk in. You can add more salt and pepper to taste.
  3. Put your watermelon, radishes and onion slices together in a bowl and pour half to 3/4ths of the dressing on top and carefully mix together. Use your hands very lightly and make sure that the dressing is covering most of the pieces.
  4. Place your arugula and chopped mint in a serving bowl and add your dressing/fruit/veg mixture on the top. Gently toss the arugula, mint and dressed mixture.
  5. Finish off with crumbles of feta cheese, salt, and pepper to taste.


Note: Adding berries to this summer salad tastes incredible. Adding strawberries or blueberries increases the flavor profile.
